On the schedule last week, (didn’t mention it here but if you follow me on Twitter or Facebook you should have probably known I stayed a couple of days up in Aberdeen last week for some boozy adventures), beside a lazy morning in the Granite City trying to get out of bed but not really succeeding & an incredibly boring drive under the rain, was a long-overdue visit to Saint Andrews’ brewery/distillery Eden.Mill, that I was fortunate enough to discover through the eyes and stories of its founder Paul Miller.
Here are my top points about Eden.Mill:
>We’re talking about a all-in-one Beer-Gin-Whisky producing facility allowing Eden Mill to be extremely experimental in its approach. Hop Gin, Barrel-aged beers… Discussing botanicals & flavours with their creative staff was a definite highlight of the visit. Expect no traditional or classic stuff there – they just don’t do boring.
>Knowing all the international praises they’ve received over those past few years – I couldn’t be more surprised to find out that the place was SO small (check the below pictures and see those stills!) – the all “done by hand/crafty” thing is definitely no marketing gimmick here and maybe even underrated. I mean, they fill out only 3 barrels of whisky per week… And their stuff is more than promising (review coming soon…)! Seems like they’re playing with some ex-Ardbeg casks at the moment… #JustSaying.
>The future is even brighter! On picture 5 down there, you can see the site of the future distillery… Which will be nestled within an historical listed building (right next to the existing facilities) allowing much more room for the distillery equipment and thus a larger production capacity. Exciting times ahead for Eden.Mill!
So yes, if you find yourself in St Andrews one day, looking for something else to do than breaking the bank trying to book a space on the Old Course, I would highly recommend you go see this amazing place by yourself!
